π₯ Ultimate Slow Cooker Pot Roast
π A tender, melt-in-your-mouth roast with hearty veggies and rich flavors — pure comfort food!
π Ingredients:
πΉ 3 lb beef chuck roast
πΉ 2 tbsp olive oil
πΉ π§ Salt & pepper, to taste
πΉ π§ 4 cloves garlic, minced
πΉ π§ 1 large onion, sliced
πΉ π₯ 4 carrots, chopped
πΉ π₯ 3 potatoes, peeled & quartered
πΉ π 2 cups beef broth
πΉ π· 1 cup red wine (or extra beef broth)
πΉ π 2 tbsp tomato paste
πΉ πΏ 2 tsp dried thyme
πΉ πΏ 2 tsp dried rosemary
πΉ π 2 bay leaves
πΉ π₯ 1 tbsp Worcestershire sauce
π©π³ Instructions:
1️⃣ Season roast with π§ salt & pepper.
2️⃣ Heat olive oil in a skillet → sear roast on all sides until browned. ➡️ Transfer to slow cooker.
3️⃣ Add π§ garlic + π§ onion to the skillet, sautΓ© until fragrant.
4️⃣ Place π₯ carrots + π₯ potatoes around roast in slow cooker. Top with garlic & onion.
5️⃣ Mix π broth + π tomato paste + πΏ herbs + π bay leaves + π₯ Worcestershire + π· wine. Pour over roast & veggies.
6️⃣ Cover & cook on LOW ⏳ 8–10 hrs, until beef is tender & falling apart.
7️⃣ Remove π bay leaves ➡️ shred beef & serve with veggies & sauce.
π Notes:
π For thicker gravy: whisk 1 tbsp cornstarch + 1 cup cooking liquid, then stir back in.
π Best served with π₯ mashed potatoes or π₯ crusty bread.
