๐น️ Ingredients:
◾️ 1 tbsp olive oil
◾️ 1 medium onion, chopped
◾️ 2 carrots, sliced
◾️ 2 celery stalks, sliced
◾️ 3 garlic cloves, minced
◾️ 1 inch piece ginger, grated (optional for immunity boost)
◾️ 1½ cups cooked shredded chicken (skinless, boneless)
◾️ 6 cups chicken broth (low sodium preferred)
◾️ 1 tsp turmeric powder
◾️ ½ tsp black pepper
◾️ Salt to taste
◾️ 1 bay leaf
◾️ ½ tsp dried thyme or oregano
◾️ 1 cup baby spinach or kale (optional)
◾️ Juice of ½ lemon
◾️ Fresh parsley for garnish
๐น️ Instructions:
▶️ Heat olive oil in a large pot over medium heat. Sautรฉ onion, carrots, and celery for 5–6 minutes until softened.
▶️ Add garlic and ginger, cooking for another minute until fragrant.
▶️ Stir in turmeric, black pepper, thyme, and bay leaf. Mix well.
▶️ Pour in chicken broth and bring to a gentle boil.
▶️ Add shredded chicken, reduce heat, and let it simmer for 15 minutes.
▶️ Stir in spinach or kale if using, and cook until just wilted.
▶️ Remove bay leaf, squeeze in lemon juice, and adjust seasoning with salt and pepper.
▶️ Serve hot, garnished with fresh parsley.
