ππ₯ Pot Roast over Creamy Mashed Potatoes ✨π΄
π Ingredients
➡️ For the Roast:
π₯© 3–4 lbs beef chuck roast
π« 1 tbsp olive oil
π§ 1 onion, chopped
π§ 4 garlic cloves, minced
π₯£ 4 cups beef broth
π₯ 2 cups carrots, chopped
π₯ 2 cups potatoes, chopped (for roast)
πΏ 1 tsp thyme
πΏ 1 tsp rosemary
π§ Salt & pepper, to taste
➡️ For the Mashed Potatoes:
π₯ 4 large potatoes
π₯ ½ cup milk
π§ ¼ cup butter
π§ Salt & pepper, to taste
π©π³ Instructions:
1️⃣ In a large pot, heat π« olive oil over medium-high heat. Season π₯© roast with π§ salt & pepper, then sear on all sides until browned.
2️⃣ Add π§ onion + π§ garlic, cook until fragrant.
3️⃣ Pour in π₯£ beef broth, then add π₯ carrots, π₯ potatoes, πΏ thyme & rosemary. Stir well.
4️⃣ Cover and simmer on π₯ low heat for 3–4 hours until fork-tender.
5️⃣ Meanwhile, peel & chop π₯ potatoes for mashing. Boil in salted water until tender, then drain.
6️⃣ Mash with π§ butter + π₯ milk + π§ salt & pepper until creamy.
7️⃣ Serve the juicy π roast over fluffy π₯ mashed potatoes — pure comfort food! ❤️
